Aim of the project: To create an elegant sparkling wine offering the most classical typical features of Valdobbiadene Prosecco, enhancing its characteristic aroma and favour. To obtain a glass of enticing, tempting bubbles that is truly well-balanced so that the Prosecco can be enjoyed to the full.
Area of origin: Grapes coming from vineyards in the municipality of Valdobbiadene.
Grapes: Prosecco grapes of D.O.C.G. quality together with Bianchetta and Verdisio grapes.
Processing: Secondary fermentation with charmat method for minimum of 30 days with constant temperature control between 16-18°C. The product is controlled daily with tasting by the oenologist of the Progettidivini Cellar to check the correct progress of fermentation.
Type: Spumante Extra Dry.
Alcohol content: 11,00 % VOL.
Residual sugar: 18 gr/Lit.
Colour: Bright straw yellow.
Aroma: Typically indicated as the original aroma of pure Prosecco with refreshing fruity and flowery hints.
Flavour: Full, harmonious with just the right touch of sweetness. The balance between fragrance, favour and aromatic intensity makes this wine highly quaffable and pleasant to taste.
Classic accompaniment: Perfect accompaniment for fruit or fish-based appetizers, pleasing with light fish-based frst courses and excellent at the end of a meal with handmade pastries.
Suggestions: Surrounded by the splendid scenery of the hills of Valdobbiadene, in May, when the blossoming vines fill the air with their scent, we discover the “Valdobbiadene snack” consisting of fairly thick slices of local salami cured for 5 months, “morlach” cheese made with milk fresh from Alpine pastures, freshly baked bread and bubbly served at 6°C in a large glass. A simply divine combination!
Serving: Serve in a large glass to appreciate to the full the fine perlage and the intense aromas.
